The Big Sur Granola an ESSENTIAL Item for Summer Camping Trips!

Big Sur is my favorite place to camp.  The ocean, the redwoods, the natural hot springs, waterfalls, and hiking creates a vacation that deeply connects to the Earth and the Self.  I take along this granola for breakfast to go with a cup of camping coffee, and another handful along for a hike.  The fiber and healthy fats are filling, and the mild coconut flavor along with the warming spices is lovely.



4 C rolled oats

1/4 c flax seeds

1 c whole roasted almonds

1 c roasted pistachios

1 T cinnamon

1 tsp. nutmeg

1 tsp. sea salt

3/4 C honey

½ c coconut oil

2 T vanilla


Combine the dry ingredients and set aside.  Gently heat the honey, oil, and vanilla until combined, then pour over dry ingredients and mix well.  Spread in a greased baking sheet and bake at 325 for 50 minutes, until the granola turns golden brown.

This is the perfect snack to take with you while you enjoy the outdoors! Also, sprinkle some on top of smoothies, yogurt, or in a bowl with milk is you are feeling fancy!
